“Instant Enormous Windfall, Good Health and Longevity” Horse-Shaped Yu Sheng
Peony Jade’s “Instant Enormous Windfall, Good Health and Longevity” raw fish Yu Sheng is a true celebratory platter and an exclusive treat for the culinary and visual senses. Meticulously designed and crafted in a prosperous horse-shape with four Chinese characters, 马上有钱, this luck-and-wealth creation is packed with a unique mix of ingredients. Expect fresh premium seafood like hamachi (yellowtail), tuna belly, Atlantic salmon, Australian abalone, fish roe, wasabi ebiko (prawn roe), wakame seaweed, jellyfish, pomelo, mesclun greens, shredded raddish and carrots. This glorious platter is then enhanced with chef’s secret self-crafted sweet sauce, citrusy yuzu juice and a sprinkle of truffle oil.
Peony Jade’s signature deep-fried thin strips of lotus root chips, crispy fried vermicelli, roasted pine nuts and toasted sesame seeds are added to provide that extra delicious crunch to the dish.

This exquisite “Prosperity Forward” Horse ingot requires a lengthy preparation of up to 12 hours. The delicious treasure trove holds whole Australian abalones, crispy pork knuckle, chestnuts, flower mushroom, fatt choy, pork tendons, premium golden conpoy, red dates and premium wood-ear mushrooms wrapped in aromatic lotus leaves encased in a handcrafted, ingot-shaped salt crust dressed with a red saddle with a Chinese character, 福,which means fortune. Priced at S$288.88, the ingot serves up to 6 guests.

This beautifully handcrafted work-of-art by the talented culinary team at Peony Jade signifies the endless streams of wealth and unexpected windfalls all year round. “Poon Choy” is a traditional peasant dish that originated some 900 years ago where Chinese peasants used to layer and stack as many ingredients as they could harvest or barter in a huge wooden basin cooked over pits of fire during the break of spring.
