Ever since I attended the Perfect Italiano Masterclass last year, it’s been my go-to cheese brand whenever I shop for my groceries. In this Cheesy Chicken Meatballs recipe, I’m adding Perfect Italiano Grated Mozzarella to my meatballs. Who doesn’t love meatballs? These homemade ones are simple to make.
I was a tad annoyed that the supermarket was out of ground chicken so I ended up getting chicken fillet and blitzed that with my food processor. Meatballs can easily become dry – particularly when made using ground chicken or turkey, so I like that grated mozzarella is mild flavored but very stretchy. It gives an oozy-woozy melty goodness and helps to juice-fy my chicken meatballs.
Cheese Chicken Meatballs (yields 15-17)
Ingredients
250g Ground Chicken
3-4 Shallots, chopped
2 cloves Garlic, chopped
2 Tbs Parsley, chopped
1 tsp Salt
1 tsp Black Pepper
1 tsp Sriracha
1/4 cup Breadcrumbs
1/4 cup Grated Mozzarella
2 Eggs
1 cup Panko Breadcrumbs
Canola Oil (for deep-frying)
Sriracha Mayonnaise
1 Tbs Mayonnaise
1 tsp Sriracha
In a bowl combine ground chicken, shallots, garlic, parsley, salt, pepper, Sriracha, one beaten egg, breadcrumbs and mozzarella. Mix well to combine completely. Form meatballs with your ground chicken, about golf-ball sized. In a small bowl beat the other egg; in another small bowl place panko breadcrumbs. Coat meatballs on all sides with beaten egg. Then place them in the panko and coat on all sides as well. Lay to rest on a plate. Once all your meatballs have been formed and breaded, deep-fry the chicken meatballs until golden brown. Lay them to rest on a sheet tray that has a resting rack on top for a few minutes before serving with Sriracha Mayonnaise.
Even though the recipe calls for Sriracha to be added to the ground chicken mixture, I assure you the final result isn’t spicy at all – therefore, this is a kid-friendly recipe (feel free to omit the Sriracha altogether if you prefer). In fact, I decided to whip up Sriracha Mayo to dip these meatballs in for extra flavor kick.
